I just love this salad as it is so packed with flavour
The crunch of the nearly cooked green beans gives it a great texture
Add the green beans and sweetcorn to a pan and bring to the boil for about a minute. Drain and chill as you don't want them overcooked.
Add your green beans, sweet corn, red chilli, diced red pepper and spring onions into a bowl and then add in all the additional ingredients. Stir and leave to marinate for a while.
