For a quick and simple dish, it’s hard to look beyond this Sausage, Lentil, Pepper and Mushroom Casserole
Perfect for a Bonfire night celebration!
Heat oil in a pan and cook the sausages until browned all over before removing them from the pan
In the same pan, add the onion, garlic and pepper and cook for about 5 mins more until softened.
Add the lentils and the sausages into the pan along with the stock, mustard, mushrooms, bay leaf and wine
Bring quickly to the boil and then simmer for 20 mins with the lid half on until the lentils are cooked
