Salmon Bacon Salad

Is it wrong of me that I enjoy bagels with lashings of cream cheese and served with crispy bacon and smoked salmon? Say what you like but to me, they work together (try it; you may agree).

So bringing together the greatest bagel fillings ever into a salad makes sense to me.

Ingredients

  • 2x 200g salmon fillets
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 800g chopped romaine lettuce
  • 400g cherry tomatoes, halved
  • 60g croutons
  • 1 avocado, halved, peeled, and diced
  • 6 slices cooked bacon, chopped
  • For The Dressing
  • 80mls mayonnaise
  • 60 mls plain Greek yogurt
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp white wine vinegar
  • 1 tsp honey

    Method

    Preheat oven to 180 degrees C

    Place the salmon on a lined baking sheet and sprinkle evenly with salt and pepper. Bake until browned and crispy on the edges for about 20 minutes and then let cool.

    Toss the lettuce, tomatoes, croutons, avocado, and bacon together

    Whisk all of the dressing ingredients together and season with salt and pepper.

    Chop up salmon and toss into salad along with the dressing.
