Simple, tasty and vegan!
Goes great with Marrow stuffed with Root Vegetables or an easy pasta sauce
Half the red peppers, de-seed and rub with oil.
Place under the grill until the skin blackens. Take them out and put them in a sandwich bag and let cool.
Remove the blackened skins and chop up the pepper before putting into a blender
Slowly pour the olive oil into the blender while it's blitzing. You want the oil to loosen the sauce but not too much or it’s going to separate.
When sauce is the right consistency, pour out fom the blender and keep in the fridge
Heat the red pepper sauce up before service
