This Hunters Chicken recipe is really great to eat with succulent moist chicken, crisped bacon, a tangy BBQ sauce and melted gooey cheese
The BBQ sauce can be used to coat and baste ribs for the BBQ as well!
Preheat the oven to 180 C
In a sauce pan, add the oil and warm over a medium heat before adding the butter. Add the onion first and cook for 5 minutes until softened and then add the garlic, tomato puree, sugar, Paprika and cayenne and cook for another minute
Add the tinned tomatoes and vinegar and bring to the boil before reducing back to a simmer and cooking for 20 minutes until reduced slightly and thickened
While the sauce is thickening, wrap each chicken breast with 2 slices of bacon, making sure they are tightly wrapped.
Place the chicken in an oven proof baking dish and pop into the oven for 15 minutes
When the sauce is ready, pour evenly over the top of the chicken in the oven proof dish and coat the top of each chicken breast in grated cheddar cheese and put back in the oven for another 10 minutes
Remove from the oven and serve straight away
You can make the sauce days in advance and keep in the fridge
