Gin and Tonic Cake

Gin and Tonic Cake

By now you'll know that I'm partial to a gin or two so when I was thinking of a boozy cake to bring into work for a birthday celebration; it was always going to be gin (or amaretto but that is a very different cake!) .

Essentially this is basically a standard drizzle cake but the addition of gin to the bake enhances the flavour that the standard drizzle would lack.

Ingredients

  • 4 eggs
  • 200g Unsalted Butter
  • 200g Caster Sugar
  • 200g Self Raising Flour
  • 1/2 tsp Baking Powder
  • Zest of 1 Lemon
  • 100ml of Gin
  • 125g Caster Sugar
  • 125ml Tonic Water
  • 50 ml of Gin
  • 100g Icing Sugar

    Method

    Preheat the oven to 180 C (160 C for fan)

    Grease and line bottom and sides of a 900g loaf tin

    Cream the buter and sugar together until pale and creamy

    Add the eggs one at a time and beat in

    Add your gin and mix

    Fold in your flour, baking powder and lemon zest

    Spoon into the prepared loaf tin and pop in the oven for about 60 minutes or until a skewer comes out clean

    Start on the drizzle now and add the Caster Sugar and Tonic to a pan and bring to the boil and keep going ontil its got a syrup like consistancy.

    Add the gin to the syrup and allow to cool

    When the cake is ready and out of the oven, poke holes in it with a skewer

    Add icing sugar to the gin and sugar syrup and drizzle over the cake
