Cucumber and Cardamom Gin

For a really refreshing gin drink, look no further than this Cucumber and Cardamom gin.

This drink is best served as one part gin to two parts tonic and garnish with a fresh cucumber slice and some 'bruised' mint

Ingredients

  • 1 large cucumber, peeled, de-seeded and cut into 2cm slices
  • 3 cardamom pods, crushed
  • 500 mls gin

    Method

    Peel the cucumber to remove the green skin as this will make the gin taste bitter. Slice the cucumber in half lengthways and using a teaspoon; gently remove the seeds and slice into 2cm wide pieces

    In a clean and sterilised Kilner jar, add the cucumber, crushed cardamom, gin and seal the jar.

    Keep in the fridge and give a gentle shake a few times a day

    After 7 days, decant the gin from the Kilner through a coffee filter and funnel into a clean bottle.

    Tighten the lid and drink within 3 weeks
