Courgette, Feta and Mint salad

This is one of those really simple salads that is so quick to make and involves basic ingredients but is darned tasty. The feta and mint always work well together.

Some people like to add a dash of olive oil to bring everything together but try this on its own first. You can always drizzle afterwards.

Ingredients

2 courgettes

100g bag rocket leaves

200g pack feta cheese, crumbled

bunch mint, leaves picked

Method

This is the tough bit. Peel the courgettes into long ribbons with a potato peeler.

Arrange courgette with the rocket on a large platter. Scatter over the feta and mint leaves, and drizzle on your favourite dressing such as a vinaigrette or light oil if you wish
