I love dishes that take little to no effort to make and are packed full of flavour. This chicken with sherry and mushrooms ticks all the boxes.
A perfect dish for when you get back home and want to relax
Pound out the chicken until thin
Add the oil and butter to pan and brown off chicken breasts. Remove chicken from the pan
Deglaze pan with sherry and then add the mushrooms over a low heat to reduce sherry by a third
Top up with chicken stock and return the chicken to the pan to finish cooking and reduce the sauce by half
Serve
