Beetroot & Orange Soup


Beetroot & Orange Soup

Justin Timberlake claimed to have Sunshine in his pocket and to me, this cold soup is sunshine in a bowl

Zesty, earthy and spicy (depending on how much Worcester you like). As shop bought generally has the beetroot in vinegar, this affects the soup so simply buy fresh beets and boil them until tender, let cool and peel.

Ingredients

  • 500g cooked red beetroot, diced
  • 1 vegetable stock cube
  • 200 mls orange juice
  • 250 mls of creme fraiche
  • Worcester sauce
  • Salt & freshly ground pepper
  • 100 mls full cream yoghurt

    Method

    Mix the stock cube with 600mls water and put into a pan. Add the diced beets and cook for about 5 minutes on a low heat

    Blitz in a blender until it's smooth

    Put the blitzed beets back into the pan and add the orange juice and creme fraiche and bring to the boil stirring all the time.

    Season with Worcester sauce and salt n pepper and put in the fridge to cool

    Before you serve, swirl some yoghurt through it.
