Iceland has quite a dependence on the sea so I thought the best option would be to showcase a very traditional Icelandic fish recipe which is quick and simple to make and utterly moreish

As an aside; the most popular snack food in Iceland is actually the Red Polser found also in Denmark

Ingredients

  • 25g butter
  • 6 skinless cod fillets or other meaty fish
  • 1 lemon, juiced
  • salt and pepper to season
  • 200g Emmental cheese, grated
  • 200mls double cream
  • 1 Tbsp mustard
  • 100g dried bread crumbs

    Method

    Preheat oven to 180 C

    Butter a fairly deep baking dish. Season the fillets on all sides with salt, pepper and lemon juice and place the fillets into the baking dish

    Scatter the grated cheese over the fillets to cover before pouring over the mixture of cream and mustard. Finally, top with the bread crumbs and place straight into the oven uncovered for about half an hour

    Leave the fish to rest for a few minutes before removing from the baking dish with a spatula. Eat straight away
