Badkoubeh Kookoo from Iran is one of the most popular dishes made in the north of the country. At heart, we'd possibly liken it to a chicken omelette but it's so much more than its constituent parts.

This is such a simple and delicious snack and can be made quickly if you buy in pre-cooked chicken

Ingredients

  • 500g cooked chicken breast
  • 9 eggs
  • 3 Tbsp plain yoghurt
  • 2 Saffron stems, brewed in 2 Tbsp boiling water
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground Turmeric
  • 3 cloves garlic, grated
  • 1/4 tsp ground ginger
  • 1/2 tsp baking powder
  • 2 Tbsp Olive oil, plus more for frying

    Method

    To start, shred the cooked chicken and place into a large bowl. Then add in the yoghurt, saffron (including the water), salt, pepper and turmeric, garlic, and 2 tablespoons of olive oil. Give it a good mix

    In a separate bowl, add the eggs and using a whisk, beat until very frothy. Add in the ginger and the baking powder and make sure it's all incorporated

    Pour the eggs into the bowl with the chicken and gently bring it all together. Leave this on the side for a few minutes

    In a frying pan, add enough oil to shallow fry and warm over a medium heat

    Take a large spoonful of the chicken and egg mixture and place into the pan. Flatten it down and fry for about 3 to 4 minutes a side. Remove from the pan and place on some paper towel to drain the excess oil. Repeat the process until all the mixture is used up

    Serve hot and enjoy
